Dutch Butter Cake

This is “boterkoek”, a traditional Dutch treat which is super easy to make. Just a couple of ingredients are required. An ideal recipe to have on hand if you unexpectedly get visitors.

Serves: One 20x20cm baking dish

Ingredients

  • 250g flour

  • 150g soft sugar

  • 225g cold butter

  • 1 egg yolk

  • 1/2 vanilla pod

  • 1/4 tsp salt

Directions

  • Pre-heat the oven to 180 °C. Cover the baking dish with butter.

  • Cut the vanilla pod in half, scrape out the insides and add this to a bowl together with the flour, sugar and salt.

  • Cut the butter into small pieces and add them to the bowl. Knead together to form a homogenous dough.

  • Spread the dough evenly in the baking dish. To flatten the top, you can use the back of a spoon.

  • Beat the egg yolk, and spread on top using a brush. Using a fork, draw a raster.

  • Bake in the oven for 30 minutes. Leave to cool completely before removing from the dish. Then remove and cut into small squares.
