Pilaf with steamed cod

This is a single-pot dish. While the rice is cooking, the cod will be in the same pan, allowing it to cook by steaming. Add some great spices, ginger and a little bit of chili, and you have a great dish.

Ingredients

  • 200g cod fillet without skin

  • 500ml vegetable stock

  • 200g spinach

  • 150g basmati rice

  • 1 shallot

  • 1 red pepper

  • 1/2 red chili

  • 1 clove of garlic

  • 2cm fresh ginger

  • 1/2 lemon

  • 2 tsp masala powder

  • 3 tbsp butter

Directions

  • Dice the shallot, remove the seeds from the chili and cut into fine pieces. Crush the garlic or cut into fine pieces. Cut the pepper into cubes. Grate the ginger.

  • Heat the butter in a saucepan, fry the shallot, chili, and ginger for 3 minutes on medium heat.

  • Add the garlic and masala powder, fry for 1 minute, add the pepper and fry for another minute. Add the rice and stir thorougly.

  • Add the stock and cover the pan. Lower the heat and allow to cook for 10-12 minutes. Stir regularly.

  • Roughly cut the spinach. Cut the lemon into slices.

  • Add the spinach to the pan, and stir thorougly. Add salt and pepper to taste. Lay the cod on top, cover the pan, and allow to steam for 8-10 minutes
