Dad's pasta sauce

A pasta sauce recipe my dad got while working as a night guard for an Italian hotel

Serves: 6-8

Ingredients

  • 10 tbsp olive oil

  • 1kg tartar

  • 3 onions

  • 4 cloves of garlic

  • 2 boxes of mushrooms (500g)

  • 0.5kg carrots

  • tuft of parsley

  • 2 big glasses of red wine

  • 4 big cans of double concentrated tomato puree

  • 5 tbsp sugar

  • oregano

  • thyme

  • basil

Directions

  • Use a blender to chop mushrooms. Start heating the pan, add oil and mushrooms. Stir until all moisture has evaporated.

  • Chop the onions using a blender. Add them, together with the garlic.

  • When sautéed, add minced carrots.(in a blender)

  • Add parsley

  • Add tartar, and stir until sautéed.

  • Add salt and pepper

  • Deglaze with red wine and keep stirring until evaporated.

  • Add sugar and tomato puree

  • add water to reach a nice smooth sauce.

  • Let this simmer until oil comes floating on top.

  • If sauce is too thick add water, or tomato puree when it’s too thin

  • Add spices
