Chicken pilaf with peaches
This dish used to be similar to risotto, but nowadays you’ll mostly see this very easy version of a chicken pilaf with peaches. Mmm!
Serves: 4
Ingredients
500g chicken fillet or thighs
1 onion
3 cloves of garlic
2 tbsp tomato paste
250 g cubed tomatoes
1.5 tbsp sambal badjak
1 cube for chicken stock
1 large can (~500g) of peaches
5 tbp ketjap
splash of worchestersauce
250 g mushrooms
1 red pepper
little bit of cornflour
Directions
Cut chicken breasts in cubes, mushrooms in slices and pepper in cubes. Cut the peaches small or big, to your liking.
Fry chicken shortly, add onion, mushrooms, garlic and pepper. Also add ketjap and sambal.
When chicken is cooked through, add tomatoes, tomato paste, peaches with fluids, worchester sauce and the chicken stock cube.
Thicken the sauce with cornflour if necessary. Add salt en pepper.
Serve with rice
