Chocolate Lava Cakes

They always look incredibly complicated: lava cakes. Can you resist this dessert when it sits in front of you?

You don’t have to use professional timbales as moulds. You can grab anything, even coffee cups. Or use a muffin mould to make the lava cakes. Whatever moulds you use, make sure you apply the molten butter and then cover it with sugar, so the lava cakes will release easily.

Serve with red fruit and whipped cream or ice cream.

Ingredients

  • 3 egg yolks

  • 3 eggs

  • 75 g sugar

  • 150 g dark chocolate

  • 150 g butter + a little

  • 30 g flour

Directions

  • Pre-heat the oven to 170 °C

  • Melt the butter in a saucepan. Finely chop the chocolate. Beat the egg yolks with the eggs and sugar until fluffy.

  • Add the chocolate to the molten butter, and allow to melt using the heat of the butter.

  • Add the chocolate mixture to the egg mixture and carefully mix together. Mix in the flour, too.

  • Grease the moulds with a little molten butter and sprinkle the inside of the moulds with a little granulated sugar. Turn the moulds so that the complete inside is covered with a layer of sugar. Pour out the excess sugar.

  • Fill the moulds to ¾ with the batter and bake for about 14 minutes until done.
