Loaded sweet potatoes

These loaded sweet potatoes are easy to make and absolutely delicious.

Components

  • Pico de gallo

Ingredients

  • 300g minced beef

  • 2 large sweet potatoes

  • pico de gallo

  • olive oil

  • 1 avocado

  • 2 tsp thyme

  • 2 tsp oregano

  • 2 tsp cumin

  • 1 tsp chili flakes

Directions

  • Pre-heat the oven to 200°C

  • Cut the sweet potatoes in half lengthwise.

  • Cover the inside face of the sweet potatoes in olive oil and sprinkle with salt and pepper.

  • Lay the sweet potatoes out on a baking tray face down, bake for 40 minutes or until they have caramelized.

  • Prepare the pico de gallo.

  • Fry the minced beef in a small amount of olive oil. Add spices.

  • Cut the avocado in half, then cut each half into thin slices.

  • When the sweet potatoes are ready, put one on each plate and mash the pulp inside the skin.

  • Load each potato with half of the minced beef, pico de gallo and avocado.

Pico de gallo

Ingredients

  • 3 tomatoes

  • 1 red onion

  • 1/2 jalapeño

  • 15g coriander

  • 2 tbsp lime juice

  • pinch of salt

Directions

  • Finely cut the tomato, onion and jalapeño.

  • Roughly cut the coriander.

  • Combine everything and mix well.
