Loaded sweet potatoes
These loaded sweet potatoes are easy to make and absolutely delicious.

Pico de gallo
Ingredients
300g minced beef
2 large sweet potatoes
pico de gallo
olive oil
1 avocado
2 tsp thyme
2 tsp oregano
2 tsp cumin
1 tsp chili flakes
Directions
Pre-heat the oven to 200°C
Cut the sweet potatoes in half lengthwise.
Cover the inside face of the sweet potatoes in olive oil and sprinkle with salt and pepper.
Lay the sweet potatoes out on a baking tray face down, bake for 40 minutes or until they have caramelized.
Prepare the pico de gallo.
Fry the minced beef in a small amount of olive oil. Add spices.
Cut the avocado in half, then cut each half into thin slices.
When the sweet potatoes are ready, put one on each plate and mash the pulp inside the skin.
Load each potato with half of the minced beef, pico de gallo and avocado.
